Today's recipe is delicious! As a matter of fact my family likes it so much we've made it four times in the past month and I'm making it for our couples group tonight!

So far my New Year's resolution to cook more is going pretty well, but I need more easy recipes that my limited skills can handle, so if you have one don't forget to submit it below!

This week I learned that a wooden spoon over a boiling pot wont allow it to boil over! I don't know why, bu it's worked every time I've tried it.

Green Chili & Chicken Casserole Ingredients:

  • 1 Package of Tortilla Chips, crushed
  • Onion, diced-to taste (I prefer onion powder)
  • 4 Chicken Breast, small (or 2 large)
  • 1 Package Shredded Cheese (I prefer Cheddar/Jack or a Mexican 4 cheese)
  • 2-4 oz. Cans of Green Chilies, diced
  • 1 Can Cream of Chicken soup-no water
  • 1 24 oz Container of Sour Cream
  • Salt & pepper (to season poultry to taste)
  • 1 Cup of broth from boiled chicken (see below)
  1. Preheat over to 350°
  2. Boil chicken breasts until done, cool, then dice and salt and pepper to taste.
  3. Combine diced chicken, broth, onion, green chilies, soup and sour cream.
  4. Spray 9x13 pan with cooking spray.
  5. Layer as follows:
    • Chips
    • Chicken mixture
    • Cheese
    • Chips
    • Chicken mixture
    • Cheese
  6. Bake for 30 to 45 minutes (my hubby tells me everything that needs to be cooked already IS, so really all your doing is heating it up all together.)
