I know the headline instills fear in the hearts of even the most stalwart men, but the fact is one of my New Years resolutions was to cook more and I'm keeping it!

If you've been listening at all you know that I don't do any of the cooking in our household, I'm blessed with an amazing husband, Alex, who does all of it.

Now don't get me wrong, I will make the occasional bowl of cereal or noodles, but Alex handles 99% of our dietary needs.

It's a good thing too, because when I said even the fire alarms cheer me on when I cook I wasn't exaggerating (okay maybe a little), but I have RUINED 3 roasts in crock pots! (Granted one of them was a corned beef and not a roast to begin with but it's a true story & YES it is too possible!)

So when I decided to begin cooking I decided to stick with easy oven recipes that you guys have brought me for breakfast in the past!

This one comes from Bea Rich, it's a breakfast casserole that my husband loves so much he actually eats the left overs!

  • Oven Temp: 350 - 400
  • Cook Time: 20 Min.

Ingredients:

  • 1 pkg Simply Potato hash browns
  • 16 oz. shredded cheddar/Jack cheese
  • 1 lb. Jimmy Dean mild Sausage
  • 7 oz. diced green chili's
  • 12 eggs

Directions:

  • Brown hash browns and set aside
  • Brown sausage, mix with hash browns
  • Beat eggs with a little cream or milk
  • Add chili's & 1/2 of cheese
  • Spray 9 x 13 pan with Pam
  • Spread sausage/potato mixture in bottom of pan
  • Pour egg mixture over this and top with remaining cheese.

Bake:

  • Until bubbly & top is lightly brown
  • Stick knife in center to make sure eggs are cooked all the way
  • Cool slightly and enjoy!

Notes:

  • You can cut this in half for just two people.
  • Add spicy cheeses and more or less chili's to flavor to your taste.

Just so you don't think I can make something this complicated with out messing it up, the 2nd time we made it we decided to add an extra 4 oz of green chili's and after tasting it realized I had added 4 oz of jalapeno's instead!
