If you're a foodie or are just like me and love to eat lots of delicious food then you have probably seen a picture of Birria tacos. I know that I have but I really didn't know what it was so I had to find out for myself what this yumminess is all about.

Birria is a Mexican stew traditionally made of goat, beef, or mutton. While it's gaining lots of popularity now this has been a dish that is often enjoyed at celebrations such as weddings or holidays. There are many different recipes but most are served with (corn) tortillas, onion, cilantro, and lime. The meat is marinated prior to making the stew in abodo which is dried chilies, herbs, vinegar, and other spices.

Birria is very similar to Barbacoa but it's actually a product of barbacoa. Birria is made by dunking barbacoa in a sauce that is then cooked for 4+ hours until the meat just falls apart when eating it.

Where Was Birria Created?

The popular Mexican dish was first created in the state of Jalisco. While Birria tacos have become a fan favorite recently you also see the meat being used in enchiladas or tortas as well.

This topic was just brought up on a Grand Junction Facebook group and I didn't know where to find Birria in Grand Junction, until now. There were only 4 different Mexican restaurants or food trucks here in Grand Junction that were even mentioned for serving Birria. In no particular order they are:
