Today's recipe was brought to me as a meal during my recovery from surgery last week by Kristen Winn at the City of Grand Junction's Public Works and Planning Department.
Thanks to the gals in my baby group, my family and I were very well fed during my recovery because they set up people to deliver us food through a program online called Meal Train.

This was one of the nicest things that could have been done for us and I plan on implementing for friends and family who aren't well myself because when you're dealing with recovering from an illness, surgery, a death, or a birth in the family, not having to worry about food everyday is a huge relief in the day to day scheme of things.

I learned last week that not only do used Tic Tac containers make great shakers for your garden seeds, they also make great spice shakers too!

Family Baked Burrito Ingredients

  • 1 Medium onion (I use onion powder)
  • 1 Pound of lean ground beef
  • 2 tbsp of Southwest seasoning (I used Taco seasoning)
  • 2 Garlic cloves pressed (can substitute with garlic powder)
  • 11 oz of Mexican corn (optional)
  • 12 oz of salsa
  • 1 Can of re-fried beans
  • 2 tbsp of Water
  • 7-6" Corn tortillas
  • 2 Cups of shredded Colby & Monterey Jack cheese blend (I use a hot pepper blend)

Instructions:

  1. Preheat oven to 425°
  2. Brown beef onion, beef, seasonings and garlic. Drain.
  3. Combine beef & salsa in a bowl.
  4. Combine beans & water in a bowl.
  5. Assemble Burrito Bake in a deep covered baking dish.
  6. As follows: 2 tortillas on the bottom, cut smaller to fill gaps, spread 1/3 of beans over tortillas, layer with 1/3 of beef mixture, top with 1/3 of cheese. Repeat layers
  7. Bake 18-20 minutes or until cheese is golden brown and edges are browned.
