The folks at Shermans Travel set out to find the very best restaurants from each state. They found Colorado's champion in Boulder, Colorado. The restaurant has been open for nearly 20 years on the Pearl Street Mall and has received multiple "James Beard Foundation Award for Excellence" honors. It's also a recipient of a "Michelin Guide One Star," so you know it's got to be good.

Having never been there yet, I cannot speak to personal experience but being a foodie, I'm absolutely going to make a reservation to get in there to experience Colorado's best for myself.
