Great Mexican Restaurant Opens 5th Colorado Location And It’s Terrific

If there's one kind of restaurant in Colorado that most can agree on, it's Mexican. There's a family in Colorado that now has five locations for Coloradans to enjoy.

Since 1986, Maria and Rene Cervantes, along with their kids and grandkids have been providing delicious, authentic Mexican meals. Their fifth location, which opened in August of 2024, continues that legacy.

If you love Mexican, you need to check them out.

If you haven't heard of La Mariposa Mexican Restaurant before, I would be kind of surprised, as everyone loves their traditional and modern Mexican cuisine. If you haven't been into one of their other locations, do so; or, stop by their latest location in Loveland.

New Mexican Restaurant in Loveland, Colorado

Technically, there are a few things happening when considering this Loveland location of La Mariposa, which already had locations in Longmont, Lyons, Boulder and Greeley.

For one thing, though it's their 5th location in Colorado, technically, you could call it their 6th, as they closed their initial location down when they opened their Longmont location.

Secondly, the Mexican restaurant that was at this Loveland location, was a part of the family: Tito's Mexican Grill was in the spot for 10 years, run by a member of the Cervantes family,  Christina Cervantes.

Third, this Loveland location is a new concept for the long-existing restaurant, with it being called La Mariposa Mexican GRILL:

...It has the traditional taste of La Mariposa's cuisine, with a splash, flair, and modern cooking and preparation methods.

The new restaurant has a "Taco stand in a restaurant" vibe, with a great menu, along with a nice little coffee bar.

I had been into Tito's a couple of times; it's good to see the La Mariposa family taking it on for this new adventure.
