No one wants to stand over a hot stove when it's 100 plus degrees out. So here are a few recipes, using Colorado ingredients, to make it easier on you and help beat the heat.

I am to the point where a salad and a sandwich sounds good, because I'm standing in front of the refrigerator most of the time, where it's nice and cool. So I decided to look around and see if I could find some easy summer meals you can make and not sweat the whole time doing it.

For those of us who love Olathe sweet corn, this one is awesome. A little cooked, a little raw and a lot of flavors. And since the cooking duration is rather short, you won't be left standing over a hot stove. Make sure you get the best Colorado grown green chili you can find. Add in whatever you like to round it out. Think of it as a Mexican corn on the cob, without the cob.

While you're at the farmers market, get several types of tomatoes, lettuce, and cucumbers; add in your favorite spices to make one great tasting salad. Another idea is to add cilantro and parsley leaves with it to give even more flavor. Try breadcrumbs to add zest.

Let your catch of the day serve as your dinner for the evening. Grill your fish as you normally would, get the seeds out of the lime and chop up the cilantro and there you have it. No matter where you fish in Colorado, this one is a winner.

My favorite summer dish and really easy to make. Fire up the grill and make sure you cut your peppers and onions large enough that they don't fall through the grill. Red onions and red bell peppers are the best tasting, but make it your signature dish by adding whatever makes your palate sing.

Another use for Olathe sweet corn. Just boil it until it's bright yellow then let it cool. Tear apart the zucchini and mix it all together with your favorite greens and cheese. Feta works quite well.

The great part about these recipes is it allows you to mix your favorite Colorado flavors together to make something delicious and cool. Let us know how they turn out!
