A Grand Junction chef has been selected to be a part of FIVE this year. Josh Niernberg is the owner and head chef of Bin 707, Taco Party and Dinner Party and will get to showcase the food of the Western Slope.

The FIVE is a group of chefs who have represented Denver dining in the past, but now it's more Colorado. Josh is the first chef chosen from Western Colorado, ever. You could say Josh is pretty excited about it:

It's a huge deal for me.  To be able to represent the Grand Valley and showcase Colorado from a different perspective than they've ever done before is awesome.

Josh will host one dinner out of five and in June, he'll be a part of the Aspen Food and Wine Festival. The chefs will also cook at the James Beard House in New York, which is a nonprofit with the mission of supporting chefs, according to the GJ Sentinel.

Josh focuses on utilizing local produce and according to Grand Junction Economic Partnerships Executive Director, Robin Brown:

Josh's role in growing our farm-to-table movement cannot be overstated. He changed dining and pushed the small plate and sharing format.

Over the summer Josh will host a dinner for the FIVE in Grand Junction. He's thinking about preparing the meal in his food truck and eating at an outdoor venue. Although other chefs will probably use their restaurant's kitchen, we're Western Colorado and we do things different.
